Did a green tea red bean mousse Cake again yesterday.. for Meiyue's birthday =) glad the girls liek it.. just that the sponge seems a bit wet today. anyway the cake is gone =)
Today I finaly pick up enough courage to try some muffin... well... courage... why?? cos i totaly forgotten how muffin taste like.. thinkt he last time i had muffin was in Sweden.. is it?? Hmmm.. anyway well it seems not too bad except I need to tweak the flavour a bit more.. not very flavourful.
Added some blue berries ont op as I have frozen 3 tub of blueberries... forgot to thaw them and just push them onto the batter.. haha end up the blueberry din burst with juices... gotto poke them 1 by 1 aft baking.. i love blue berries.. maybe I should have added more yeah?

Pai Thong Koh
Most pai Thong Koh recipe are tedious... some take as much as 3 days jsu to make the mixture... saw this and did it.. not too bad... so Im Posting this very easy Pak Thong Go recipe I extracted off the web some time ago. I modify it a little. Anyway its a simple recipe..but not easy to get that holey stuff.. Happy tryingIngredients:
PArt a)
175g sieved rice flour
140g sugar
360ml water
Part b)
1 tsp instant yeast
1 tbsp warm water
Method:
1. Mix (B) and leave aside till foamy (about 10 mins).
2. Mix (A) well and cook over slow heat (About 5 minutes) Keep stirring otherwise the mixture will get burnt and have sago pearls forming). Sieve this mixture into a big mixing bowl and cooled it.
3. Mix (part 1) and (part 2) together and mixwell. Cover the mixture and prove in a warm place for 1 1/2hours. When bubbles appear all over the surface then it is ready for steaming. Do not over fermet as it will result in sourish taste.
4. Pour the ready batter into a square greased pan (about 10inch)and steam for 20 minutes.
5. Cut into triangle pieces when cool.
Note* if u want the very authentic kind, I guess u can onli try ur hands on the complicated ones... but not worth the effort since its easily available in the market. I hope I go tthe guts to try those 3 days fermentation one...

Today I broke a record.. I baked and iced 3 loggies in 3 hours..including washing up!!! hehe and I copy linda's design for the loggys after some eye poer experience from her house last nite... she taught me how to roll the log properly.. oh my.. she is a genius haha...

Marmite Chicken recipe
Got a few request fort his recipe and thus here it goesall ingredient are approximate as I do not measure my ingredients
Chicken cut to small pieces,
marmite 2 tablespoon
sugar to taste,
chili slices
Mix well chicken with seasoning.. and leave to marinat efor at least 1 hour.
Bake at 180 degree till cook...
Serve on plate of blanch veggies as the marianate is quite salty.

Pai Thong Go
This is my all time favourites.. sicne I was young.. I remember my sisters and I can eat loads at 1 go.. and it cost almsot like 70cent per piece.. freaking ex...I remember the 1st time I attempted this, was when I was in Sweden..craving badly. and the flour cost a bomb.. and yetI failed... Just now as I was telling dear im doing this over the phone.. he said: Can do one meh? haha that why i bet Dear cant remember I attempted that in karlskrona haha... I never tried it again there as I cant bear to part with my porecious flour for more failure.
well here it is
the texture is not fantastic still,but better than alst itme lar haha..a nd no sourish taste.. some shops the sell this taste sour as they over ferment the mixture.
I will let Kelvin try this since Im meeting him for dinner and and ask him for opinion.. =)

Xmas Glogg
I never heard of glogg until 4 years ago.. of cos 4 yr ago.. I was in Sweden. They have many kind of gloggs.. from glogg for children(non alcoholic) to those with high alcohol content. It taste like wine... can be white wine or red wine used to make glogg. Many glogg have spices like cinnamon, nutmeg added to it.. oh ya.. raisins too. Its normaly heat up by the glogg holder and drink with a sprinkle of cinnamon powder on top... drank on the cold xmas night. In supermart, there will be people letting us sample various glogg... In Singapore, the only place you can find glogg is probably Ikea? Its a either like it or not kind of drink.
At the crystal factory, we even bought a glogg holder. Thinking come back here we can do it ourselves. Here is our glogg holder
A green one for the xmas season.
But too bad.. past 2 xmas i been too lazy to make any.. so it been sitting lonely in the cupboard... even ready glogg off the shelf of Ikea have not motivated me.. I hope this year I wil since we got a car now..easier to go Ikea and its only 5 mins away fr my house.
My Swedish friend Elisabeth kindly shared few of her glogg recipes with me.. I certainly hope I can do it soon =)
Glogg made of whitewine
1 bottle of whitevine (choose a sort thats demi-sec)
4 dl of water
juice and cest of one orange
juice and cest of one lemon
2 tablespoons of brown sugar
1/2- 1 dl of rum
Directions:
Mix everything into a saucepan. Leave it for at least one hour. Heat the glogg Carefully. Dont let it boil! Add the rum. Serve with raisins and almonds.
Non-Alcoholic Glogg
5 dl of black curant juice
5 dl apple juice
2 pieces of cinnamon
5 cloves
1 piece of ginger
cest of sevilla orange (bitter sour)
Directions:
Mix everything into a saucepan. Bring it to boil .Serve steaming with raisins and almonds.
Childrens Glogg (made of milk)
1 liter milk
3 dl sugar
2 tablespoons of cocoa powder
2 teaspoons of cinnamon
1/2 teaspoon of cardamom
1/4 teaspoon of cloves
Directions:
Mix everything into a saucepan. Bring it to boil while stiring. Serve steaming with raisins and almonds.
So lets hope I got some determination for this drink for the upcoming festive season... even home alone with dear also must make hehe...

Durian chocolate cake
Well.. a friend of mine requested this cake for her anniversary...and thus.. I did it as simply as possible since chocolate n durian combination.. i cant add more fruits liao...
Its a very tall cake.. mainly I put alot of durain mousse and chocolate for her.. since she is my friend.... she is paying and i try to make her money more worth it =)

Red Bean Mousse with green tea Sponge cake
My fastest cake ever... Rush like MAD... took me less than 4 hours to do everything... Sponge is green tea sponge.. and mousse with red bean... something diff..
The happy birthday.. I painstakingly print from Pc then cut 1 by 1 and stick them ont he cake before dusting with powder.. phew... and lazy girl me.. cos no time to pipe for the decor.. end up with all the sponge finger on the side hehe

Very good review bout htis cake.. even my mum who dun take green tea like this.. and people who dont like red bean love this too. not sweet.. I think the green tea powder as topping helps in balancing the sweetness.

Mango Mousse Logcake
For my polymate gathering tomorrow.. I did a chocolate swiss roll with Mango mousse filling...And since im afraid of the sickenign feeling of too much cream on my cake.. I turn the cream to Mango Mousse as well for the frosting...
Purposely made a choclate sponge with white frosting.. since log are brown..while snow are white.. so at least still can see 'traces' of log amist the snow..
Well, no Santa, no reindeer and no epressie yet.. since Santa and company is still busy up north in Lappland.. wrapping pressie for all the wonderful kids...

Yet another fruit cake
My dear friend Edwin whom I got to know thru my hobby aka baking.
He is quite pro in some way since he have attend BITC.. BTW I call him uncle.. cos he is much older than me.. He shared his secret recipe with me somewhere in March.. and I only do it now.. regret big time.. since its so yummy! Of cos the fruits.. are soak thoroughly with alcohol for 10 months to achieve best result...
Im doing some of these to give away as christmas gifts =)

Baked Sutchi Fillet
Since I bake the chicken.. well.. might as well bake somethg else.. fuss free...Using oregano and thyme leaves and some salt and olive oil... healthy and fragrant...

Wanted to do this for very long.. but keep putting it off as many people deep fry their chicken..
I did mine the easy way... and din bother to follow the recipe... taste good!

Yam Cake--Angie's Choice alike
Its my 1st time.. BIG risk for my friends bday manz... but I did it.. thou the cream was veryhard to settle... but it does taste liek orh ni alright
Was rushing through this Yam cake for my friend Birthday... I risked doing this cake.. mainly because i do not know what flavour does this friend like for a cake.. and I remember she loves my Orh Ni.. and so I did this.. it sure taste like the orhni.. just not as thick... since there is a little cream in it... Very diff to make a smooth surface.. .I tried very hard fort his cake.. considering Im very tired today hehe..
