Kebabs

I wanted a simple dinner..mainly because after 2 days of 'off' im still feeling lazy.. wanting to play w my new toy.. the metal skwers.. I decided to do kebabs.

Went to CS to look for mutton.. but they dun hav.. onli got the boneless one which was huge and expensive. Ended up with 250g of pork loin...



With my capsicums and borcolli I bought the other day, skwered them up and with button mushrooms as well...



Pretty easy... I got the inspiration for my spanish cookbook.

Ingredients:
pork loin,
bacon(i ommited this as i dont have any)
veggies such as capsicum,
fresh or canned mushroom


Marinate:
baking soda

Marinate pork with baking soda for an hour.. wash it off.. and add the below marinate.
This help to soften the pork..
White wine,
pepper,
olive oil,
coarse salt
some mix herbs(I use oregano and thyme)

Just marinate the pork with the above.. reserve the "juice"
Skewer them accordingly as u want.. and grill in oven for 10 mins, flip over and grill another 5 min. Basting it with the left over 'juices' fr the marinate.

Tip: if u arre afraid the meat will stick on ur wire grill, brush some veinegar on it before u lay the skewered meat on it... works nicely... Can be use on BBQ pit wire mesh too =).. ur chicken wing will come out nicely with skin intact.



Was afaraid dear wun like this as he dun like pork.. he might find it too hard.. Who knows he ate the kebab faster than me! looks like the baking soda works hehee..

Green Pizza

Last nite... when I ask Dear what he want for lunch/dinner today.. he req for pizza.. and so.. ok dinner it shall be... knowing myself I will procastinate on making cos I need to make the dough from scratch... well.. at least I did it haaa



I love and hate pizza... love it cos i love cheese.. olives, capers, artichokes... I hate it cos I hate tomato sauce.. somehow.. this is 1 veggie/fruit u call it that i dun realy prefer.. thou i will not reject. Told dear if he want pizza gotto go buy tomato sauce as well as cheese.. the rest of topping will b straight out fr the fridge or freezer. Trying to be funny... I tot.. make the base w/o tomato... and whats the next best thing?? actualy I tot of curry hahaha but nah... too heavy... Hvaen been feeding dear with greens lately so I thought spinach will be good... and did a spinach pesto w/o nuts.. since I have none..



Well here goes my monster pizza...


Its my 1st time with this pizza base.. hope its good..tomolo can proceed to making another 1 for my sisters.


Before I forget what recipe I use.. here goes:

Dissolve in 2 cups warm water, in this order,
1 tsbp each of sugar,
1 tbsp active dry yeast (or 1 packet),
1 tbsp salt.

Blend in with a large spoon 5 to 6 cups Flour (you can also add 2 tablespoons of olive oil for flavor).
Turn out onto a floured surface and knead until smooth and elastic.
Clean and grease your bowl, place the dough in it, cover and let rise until doubled in bulk (1 to 2 hours).

NEXT, preheat your oven to 220 degree and cut your dough, which you’ve punched down, into 4 pieces.THEN, roll out each piece, on a floured surface, with a floured rolling pin, into a circle to fit a 12” pizza pan. (To roll, work from the center to the outside like pie dough. Let the dough rest several times to relax it and make it more cooperative. Turn it over from time to time and roll the reverse side.)NEXT, brush on a bit of olive oil, spread pizza or spaghetti sauce lightly over the surface, and let your guests add their own toppings! Sprinkle the top with grated cheese.LAST, bake for 15 minutes.

Bread...

Dear ask for bread last nite..however ran out of flour... so sad... so today went to buy my flour supplies and did these...
and also its my 1st time using my mixer to knead the dough instead of my regular use of breadmaker.. seems good enuff =)





Power Garlic bread... added alot of garlic.. so its kind of errr spicy..but smells great



Spinach with Mushroom... I love spinach...



Bacon and Cheese bread.. I think this will be dear's favourite.. tomolo his breakie!!! hehe

Champagne Pork Chop

Bought some shoulder butt chops at carrefour today
Actualy I did not know its good for pork chop until Juliana told me the other day so I went bk to buy some to try cooking fo dear..

No idea hwo to make the marinate and sauce... went thru my files.. saw this Champange pork chop and gave it a try since i got half a bottle of champagne left... result was GREAT!





Dear who dun like pork.. actualy like this..he say its nice =) yipee.. next time can make more

My 1st attempt on this tart.. i think they are really yummy.... thou I stained the look of it with the berry juice...


The custard is suppose to be delifrance alike..however.. i already forgot how delifrance one taste like...

Japanese Bread Loaf

Last night i did this till late.. only to realise I did not ferment the butter... end up the whole process was delayed.


After 13hours... finaly the bread is ready!


Really soft n fluffy inside.. hard n crusty out... see the layer of crust?
A little like roti boy but the smell of honey dew is FANTASTIC.. i tink my sisters gonna love this...

Lor Mai Gai

Did a super easy lor mai gai tonite.. at 12am hehe... for dear to bring to work later on...


Super easy...
I hope he love it..
Recipe as follows
2 cup glutinous rice
some dry mushrooms (soaked)
1 pc of large chicken thighs
oystersauce to taste
some dash of pepper
dash of fish sauce
sesame oil
2 cup water
Method
1. soak glutinous rice over night or at least 4 hours.
2. marinate chicken with seasonings except oil.
3. Fry chicken and mushroom till slightly cooked with water.
4. Remove and add in rice and fry till rice absorb the sauce.
5. put the mushroom and chicken on a bowl, add the rice on top. steam till cook.
6. Serve hot.

Mango Mousse Cake



Did 2 mango mousse cake yesterday... 1 was pre ordered..the other was for my friends and own consumption...

This cake.. I married 4 recipe together... 2 different mousse recipe, 1 sponge recipe and 1 mirror recipe.. thanx to all who guided me =) thanx alot.. we love this cake... now i got 2 more same order for next week hehee... and I will make 1 for Joey birthday too =)

Gas Torch

After many month of searching..finaly with my friend guidance... which he told me where to buy... finaly I got this..


Use it to unmould my oreo cheese cake just now.. I got PERFECT sides now... thanx to this gadget..thanx to Dear who bought it for me... it only cost $16 plus..available at DIY shop.... I love this dangerous equipment.. I think every baker should have a good torch.. and thou im not a baker... (aspiring to be) Im glad I own a simple one

Hotel Grand Roxy Buffet

Dear brought me for buffet today.. almost end up no go cos i woke up late and he din wake mi up... luckyit end at 3pm so we went almost at 12.. garang gabok..cos I need to deliver a cake at TPY as well...
Food was so soo... Mayb my appetite is still nto back yet... but.. heres 3 shots I took which I tink will appeal to you.. or at least the ladies... hehe



Strawberry chocolate fondue... the strawberry was sour... and not too firm... just nice for the sweet strawberry chocolate...



Some moussy thing.. the topping was kiwi jam or sauce I think but it tasted liek cough syrup.... the mousse was panna cotta or sth like that I think... oh ya with a dry apricot inside too



Cream with cranberry sauce... and strawberry mousse with apricot sauce...
Obviously I did not fin all 3.. i onli ate the top part.. I love the mini glass thou.. I gonna beg dear buy for me hehee

Krys Birthday cake


My friend order a birthday cake for her sister Krys...

The steam chocolate fudge cake... This time round I managed to make the cake softer.... or at least Caca say its softer...


Its a rather small cake... with a small price tag.. Only for thi sfriend of mine.. normaly I do not entertain small cake order as it means i do not earn anything out of it... but its ok =) But small cake means minimal decoration... with the silver candy balla nd ribbon.. it looks as sweet as the pair of sisters who are going to eat it...
