Jo's Apple Strudel



Finaly Finaly.. my apple strudel is donez...

But either the strudel is too HARD.. or my cutting skill is dirt lousy.. i even use a segarated knife..but still they broke up.. arghh but taste GREAT!

Afet 2 attempts today.. finaly I think Cake flour works better

Butter cookies

Did some Butter Cookies today.. the dough was VERY soft and sticky.. freeze 1 part of the dough while the rest I used my brand new cookie press which I bought 5 yr ago before I went to Sweden.. Imagine bring there and back still not used.. haha.. finaly today its the chance..



Its so fun pressing them out.. end up i press those fr the freezer as well! I love the ring shape as well as heart shape.. oh ya an xmas tree shape as well! I love cookie press..
Te butter cookies dun taste very rich.. I think need to tweak the recipe more with flavours.. lets see how

Double Cheese Chiffon

After like 1 whole year finaly I pick up enuff guts to do this... but it seems like tis a failure still but at least edible..
very cheesy and sinfull since it contain both cream cheese and cheddar...




Its suppose to b light and fluffy liek any other chiffon but this is heavy yet spongy.. how to describe??? I also dunno..mayb i will try again...

This is a rather tedious chiffon.. and if one cant do a proper normal chiffon..this will be a no go at all...

p.s: Cecily commented that the cae looks likeverycheese like.. which i think yeah hehe

USed some starwberry jam and cheery instead of whip ccream and cherry.. seems much bettr at rolling now... but texture not up to my standard.. mayb Im fussy thats why... but... Let the girls try 1st and see wat they say..

Poppy Seed with pineapple filling Swiss Roll
Poppy Seed is fromt he poppy flower.. that is also known s the opium flower =) where opium came from.. its not allowed for sale in Singapore... Looks better for the rolling rite?? hehe..

3 cup chicken

Made this for dinnr today.. told dear it was 3 cup chicken.. but I was too engross cooking the vege that the sauce dry up.. and dear teased and said.. so no more 3 cup chicken.. I forgot what chicken did he named this thou =p but its yummy!





Spicy and a little bit saltish sweet.. fragrant too!

What I did was:
Marinate the chicken pieces in light soy sauce (I use kikoman)
In the wok, Add 1/2 cup of sesame oil(by right should be 1 cup since its 3 cup chicken), fry ginger, garlic and chilli till fragrant, add in chicken and fry lightly.
Add 1 cup of wine, 1/2 cup of premium soy sauce and 1 tablespoon of premium black sauce and 1/2 bowl of water.. let it simmer till almost dry.. and serve!

This is actualy a very indian dish.. Ilost the recipe.. so I did it base on my memory

Pineapple Pie

Attempted more pastry today..


This time is pineapple pie since dear req for them this morning via sms.. he actualy said pineapple or longan pie.. so funny one where got longan pie?? haha so I did this..






I hope this batch is better than the previous one..


Some left overpastry, I made them to horn shape.. and stuffed them with the pine apple filling afer baked
Yummy...
I used canned pineapple.. mix with cinamon =) and thickened with starch.. just like what macdonald apple pie look like =)

Keeping Prawns Fresh

I learnt today that, if you want to freeze the prawns you bought from themarket and at same time keep them fresh.. just sprinkle the prawns with sugar and Salt
(my friend Leelee from baking mum say can omit salt since prawns are salty already)
Thats something new to me.. since I thought sugar might sweeten the prawns.. ANyway shall try it next time round =)

Piping Recipe

A couple of people asked me bout recipe for the basket cake.. actualy there is no recipe for the basket weave.
The main thg is the whipping cream.
Just get a box of cream(I use Phoon Huat Topping cream), and whisk it till stiff peak, add chocolate colouring. and start piping. I tried freezing the cream overnight as suggested by a few friends but the piping do not turn out as good. Either the cream is too hard, or when it soften its very runny. So I prefer freshly whip cream.

Of cos if u wan very intensive colour U might need to add alot of liquid or gel colouring and it may thin your cream causing it to be runny again.. so for the basket, I used chocolate emuulco... it works wonderfully. So probably if I want a pink basket I shall use strawberry emulco next time. And lemon emulco for a yellow basket =)

About those pattenrs.. no recipe of cos.. its all about the tips u buy fr the shop and keep practising with them.. I really lack of practice.. Gonna use my left over cream and start piping soon..

Birthday Basket for Mum

Its mum's birthday.. and I did a durain mousse cake for her.

Originaly.. I only want to do a plain cake with roses.. last nite I iced it and freeze in freezer.. din realise I pushed the cake too much into the freezer and 1 side of the cake was SMASHED... darn..

so finaly I decided to 'weaved' the cake into a basket with roses.. and of cos my roses are not good enough.. and so.. I only put 3 purple ones representing Me, Serene and Caca.. and the yellow rose is mum... sorry men in the house.. nxt yr I included u all in ok... LOL

I used Dark Soy sauce, garlic 1/2 bowl, sugar, and some 5 spice powder...
Dear and Me ate everything up.. yummy...

And we had dou miao too....

Crazy Bout Macademia Nuts

Im Back!! Finaly... and now its all bout nuts..
I hardly like nuts.. peanuts, cashew nuts.. all nono to me.. since they are HARD and also they get stuck in btw my teeth so much.. and also I get itch on my eczema when I eat too much of them... the onli 2 nuts i like are pistachio.. and the long forgotten Macademia nuts.. forgotten because is freakign expensive.. so much that i dont even want to think of eating them...
All was re-ignited when Dear went Hawaii... Hawaii is famous for these!!!! everywhere u go u find macademia nuts... When i 1st went to Honolulu.. Dear gave me a pack of the nut to bring back to hotel.. feeling bo liao aloen int he hotel.. and hungry sicne i ahd very early dinner.. I opened it up and eat.. munch munch.. my monkey instinct creep back quietly in me... I had a good time eating it.. Btw.. its not cheap in Hawaii too.. 1 pack of these cost about USD$9.90.. and onli about 300g... I sort of ration it out to eat.. day in day out.. lunch will be eating these.. and supper too... (no wonder i got fat)

Ok.. so what do they look like? let me show u .. I went to the Macademia nut facotry... dear was teasign and said.. i will go bonkers if I go facotry cos so much nuts for mi to try... almost indeed... since its a factory, I alwasy liek to explore how food stuff industry works..

Along the way into the factory.. we passed by the macademia nut plantations. estimated to have about 350000 trees there.. millions of nuts are havested every year..

Trucks are used to collect the nuts after they drop off from the trees..

In the factory, we are given free samples of th nuts... dont worry.. Im non of those ugly singapoeans who kept going back for more samples.. i only had 1 each of the samples they offered.. shiok! very yummy.. they even have wasabi flaouvr(to cater to the jap visitor i guess) and also onion garlic flavour... but i liek the honey roasted one most.. since that flavour is not so salty.. and we bought 3 pack to bring bk.. cant afford to buy so much really.. luggage bursting and wallet exploding..

this is only just 1 corner of the factory... there are so many variety.. think eat 1 mth also will not b able to finish.. prob get too sick of nuts by then..

So what does the raw fruit looks like?? As we walk ard the factory.. we went near one of the trees.. and dear pick 3 nuts for me to bring home.. hehe so pleased...

It is VERY HARD.. u need a hammer to hammer on it to break it.. anyway i stuffed the 3 nuts into my luggage as we came back.. it was still green... left it by the kitchen top and guess what happen the next day??
It sort of split open and I can remove the nut w/o any hassle... must b the weather here.. kind of strange rite?

Anyway Dear also bought me some seeds of the nut to try planting them in singapore.. thou I know chances of gettign the nuts is low.. cos it take sa bloody 7 years to grow and have the 1st harvest.. (now u know why is it so ex?)and also i dont live in landed property.. but I still want to give it a try.. and dear dear knows i liek to grow stuff.. so he sweetly bought it for mi.. I got about 5 nuts seed i tink...=p

Now i still keeping all the nuts.. waiting for my mood to come and I shall have macademia nut planting day.... its meant for tropical weather and so I hope it will grow.. thou it takes quite some time to germinate... Meawhile I shall enjoy the rest of the nutty snacks dear bought for me =)..

Remember.. if u go Hawaii.. remember to buy these nuts! very yummy!
